Potatoes are an imported item, mainly grown in the northwest and southwest regions, also called potatoes. With the spread of the slogan that beef stewed with potatoes is socialism, yams have been widely promoted in China. Now potatoes are popular in many cities, and more and more people eat potatoes. Potatoes are constantly being updated as food. Potatoes, as a staple food, have become a specialty in some places.Where I have traveled, the provinces that love potatoes are concentrated in the northwest and southwest. Gansu and Yunnan are particularly prominent. Potatoes are their staple food and special diet. There are various ways to eat potatoes, which can be called spectacular. The main areas where potatoes are grown in Yunnan are Xuanwei, Huize, and Lijiang, and they even want to make Kunming the largest potato base in Yunnan.

People in Gansu like to eat potatoes, so I published a book "The World of Potatoes". People in Yunnan like to eat potatoes. I only found out after I came to Kunming this time.Walking in the streets and alleys of Kunming, there are delicacies made of artichokes everywhere. I was a little puzzled. My friend told me that potatoes are the staple food of Yunnan people, and Yunnan people call potatoes artichokes. After dispelling this doubt, I began to explore the artichoke food in Yunnan. In Yunnan, there are many foods made from potatoes. The most distinctive food in the countryside is potato rice. Poor mountainous areas eat potato rice. Diced potatoes are cooked with rice. The diced potatoes are sandwiched in the rice, dotted with yellow and white. Alternate. When I saw such a unique potato rice, I thought of the sweet potato rice that I ate when I was a child. It was cooked with sweet potato rice and rice. Now rice is eaten in my hometown. Sweet potato rice has been eliminated and has become an object that many people miss.Especially those men and women who went to the city, bewitched by the trend of urban health care, started a life of sweet potato and rice at home.

The potato rice in Yunnan has not been replaced by rice, nor has it disappeared. I am surprised that it is still eaten in many families.People in Yunnan regard yam rice as a daily food. In provincial capitals like Kunming, yam rice still exists, and people are vying to buy it in the streets and alleys. When I was walking around the food street in Kunming, I saw a large pot of potato rice many times.I tasted the potato rice and found it wonderful. A large iron pot with two or three people hugging each other is placed on a blast furnace. When people pass by, they have to tiptoe to see the potato rice in the pot. I think With so many meals, I feel very small.Every night, many people come here to eat potato rice, and everyone eats a bowl.I lingered again and again before I made up my mind to eat a bowl of the legendary potato rice as a souvenir of my trip to Kunming. The potato rice has already been cooked in the pot. The chef shovels a small piece from the big iron pot, heats up oil in a small copper pot, stir-fries for a while, adds seasonings and sour soup, and it is ready to eat.

When I saw the yam rice in front of me, I realized that the yam rice in Kunming was no longer the yam rice in the rural areas of Yunnan—taking potatoes as the staple food was just a kind of food that recalls bitterness and sweetness, and Kunming people’s remembrance of delicious food .In the potato rice I ate, there were very few potatoes, and I put a little symbolically. It was mainly rice, with broad beans and lean meat strips added. The rice was colorful and very aesthetic.I eat this kind of potato rice, which is soft and delicious, easy to eat, and easy to fill my stomach. After a serving of potato rice, I was already very full, much easier than eating egg fried rice or Yangzhou fried rice in other places.

With the deepening of my life in Kunming, I ate a lot of food made of potatoes. There are baked potatoes, just like Changsha’s baked sweet potatoes, which are baked one by one and placed beside the stove, waiting for passers-by to choose.Crispy-skinned potatoes are the most common. There are stalls in the streets and alleys. The golden-fried potato pieces are very tempting. I watched them process them to know. After peeling the potatoes, wash them and cut them into long strips. After soaking in clean water, first boil it, and then deep-fry it in an oil pan. The surface is crispy, the inside is delicate, and the aroma is tangy.Potato cakes are mainly eaten as a dish. Cut potatoes into shreds, as thin as stir-fried potato shreds, and fry them into a cake. The shreds are connected and entangled. It tastes sweet and crisp. There are also old-milk yams, dry-stir-fried yams, yam sour soup, potato slices, yam cubes, and yams. There are fried, braised, cold, and base.

After eating so many Yunnan artichoke delicacies, I have to sigh that the love and hobbies of a nation and a region for food cannot be changed and eliminated by economic development.
